A family reuinion treat
I needed to make a dish to pass for the family reunion I was at this past weekend. I had another wrinkle. We were camping so it had to be able to be made at the campsite. Luckily I have a camper that almost always has electric hookups. So I went online to find a easy campsite dessert recipe. I found one, but it needed just a little modification. Not through any fault of the author (click the link above for the original) but because I wanted to make sure that the flavor was layered so that the latecomers in line would still get the flavor of the "topping." Here's my version of this really tasty treat.
One three pound bag of granny smith apples, sliced.
1.5 cups brown sugar
3/4 cup all purpose flour
1/4 cup whole wheat flour
1 cup quick oats (next time I'll add more probably 1.5 cups)
4 tsp cinnamon
1 cup butter, softened
So, how to make it at the campsite? Mix the brown sugar, flours, oats, and cinnamon in a gallon freezer bag. Pack that, the butter and apples to take with. About four hours (in my crockpot, yours may take more or less time) before you want to serve it start to cut up and slice the apples. I did mine very rough. Fairly big slices. Dunk them in water wile you cut them up. Then put the softened butter in the freezer bag with the dry mix. Squeeze it until it is a thoroughly mixed soft dough. Spray the crock pot with non-stick cooking spray. place some of the apples in the bottom probably about a third or so. Then, make a patty out of one third of the dough. Make it about big enough to cover the apples. Repeat 2 times, making sure the last layer of topping pretty much covers the top. Just dump the rest of the bag on after you make your last patty. Cover the now full crock pot and cook on low for about four hours.
This is really good.
